‘PIONEER’ Rive di Santo Stefano. Let’s start with the RIVE mention on the label. This claim is very important from a quality point of view because it indicates the Cru of origin of this sparkling wine. Our Consortium has identified restricted areas in the hills of Valdobbiadene and Conegliano where viticulture yields qualitatively superior results.
These areas are listed on the label with the mention RIVE and the reference of the production area, in our case Santo Stefano. The name of the bottle comes from the founder Gemin, who was one of the PIONEERS in Valdobbiadene in the production of sparkling wine and the enhancement of this noble wine.
The soil from which this Valdobbiadene DOCG comes is clayey, marly, so it gives it flavor and structure, which help balance its complete lack of residual sugar. The vines are all very old (over 50 years), and this greatly helps the olfactory complexity, which evolves in the goblet when poured.
As with Cartizze, this sparkling wine starts separate from the grapes and arrives separate in the bottle. A its particularity is the period of resting on the lees in autoclaves, which is 180 days: this long maturation leads to the evolution of aromas and structural nuances, typical of this Valdobbiadene DOCG. For restore the balance the wine remains to rest for another 4 months after bottling and be ready for sale. Detail not to be underestimated: we can only offer our wine one year after the grape harvest. What this means is that if the raw material is of quality, Valdobbiadene DOCG can last also over time. In contrast, a Prosecco DOC after 4-6 months sees its quality completely decline. Back to the PIONEER: it has no residual sugar, although the taste sensation might confuse the palate (we consider this a great asset).
Each bottle is finally hand-wrapped and put on the market.

Pairings: to be enjoyed at fine dinners and special occasions. It goes well with shellfish or a selection of raw fish, but can also be enjoyed with slightly fatty white meat.
